Jill's Chicken Enchiladas

A Dawson classic.  We love making these enchiladas. Serves 4

Ingredients
4 medium chicken breasts
3 oz Cream Cheese
1 cup grated cheese
2 T Sour Cream
2 cloves Garlic
1/2 cup diced onions
10 tortilla shells (flour - probably a few more if you're doing corn)
1-2 jars of Green Chili Enchilada sauce

Our favorite enchilada sauce is Casa Corona.  In the Dallas area it can be found at Albertsons but I haven't seen it anywhere else.  It is amazing!!!  If I didn't have this sauce I would probably have to make my own because nothing else even comes close to being this good.

Step 1 - Chop the chicken into bit size pieces and cook with the onion and garlic until done. 

Step 2 - Add the cream cheese, 1/4 c cheese, sour cream, and 1/3 jar of enchilada sauce to the chicken and cook on the lowest heat until everything is gooey and melty.


Step 3 - Put a fair amount of the filing into a tortilla shell and roll it closed.  Line them up in a pan (usually 11 x 7 will work).

Step 4 - Put the remaining sauce on top according to your sauciness preference.  Sprinkle the remaing cheese on the very top.  

Step 5 - Bake at 350 degrees for about 15 minutes until starting to brown.




Variations - There are endless ways to add to this recipe.  You could add corn, cilantro, a squeeze of lime and so on.  Don't be afraid to try out new things.
